Our Philosophy

Craft as an ingredient

We source single-origin, whole-leaf specialty teas shaped by the distinct terroir of their region. Every cup carries the character of its soil, climate, and cultivation methods — resulting in flavours that are layered and unique.

Care as a process

From sourcing and packaging to the land and people we engage with, care guides us every step of the way. Our teas are packaged in biodegradable and reusable materials, sourced through ecologically responsible estates, and served alongside local produce wherever possible.

Presence as an experience

Tea for us is a practice of presence. This attention and deliberateness shapes everything we create — from our flavours and rituals to the atmosphere of the space itself.

With exacting care, the tea is harvested — two young leaves for every silver bud — then dried in the sun and lightly roasted, to then pour into every cup of its floral, full-bodied flavour.

The world of Bai Mu Dan, too, unfolds around the qualities that give the tea its globally loved character — craft, care and presence. Our brews are inspired from Asia’s oldest tea traditions — practices that adapt to moods and change with seasons.

OUR STORY

At a Chinese Tea Shop in Taiwan,

Dinshay sipped on an epiphany that led him once and for all into the world of specialty teas. Brimming with curiosity, he travelled across a tapestry of Asian tea cultures before inevitably finding himself back in India.

He gathered insights from farming practices,

artisan crafts and Asian rituals, and brewed them together into a concoction like no other. Four years on, bai mu dan continues to serve slow, specialty teas with a touch of tradition.

With the café opening in 2022,

Dinshay’s vision of serving exquisite teas in an immersive, thoughtfully crafted space finally came to life.

FOUNDERS

Dinshay

As a tea connoisseur, Dinshay travelled across China, Japan, Taiwan, and Korea before returning, inevitably, to the depth and diversity of Indian teas. He learnt under tea masters in Guwahati, sought exceptional estates and cultivars, and spent two years perfecting teabags to honour an approach that continues to be guided by curiosity, sustainability, and an uncompromising eye for excellence.

Oormi

Oormi’s design philosophy is driven by a deep appreciation for beauty, culture, and the way people inhabit spaces. From shaping the café's atmospheric and aesthetic language to refining every detail of the guest experience, she has translated the care and intention of Bai Mu Dan into something tangible and inviting. The result is a space where people can slow down, connect, and feel completely at ease.
